What foods to avoid during the cyclosporiasis outbreak
You’re standing in the produce aisle, and suddenly every leafy green looks a little suspicious. That’s a reasonable reaction right now — cyclosporiasis cases have climbed past 6,000 nationwide, and health officials still haven’t pinned down a single confirmed source. Here’s what’s actually worth avoiding, what’s safe, and why.
Key Takeaways
No single food has been confirmed as the source of this year’s outbreak — but several foods have a track record from past Cyclospora outbreaks worth knowing about.
Cooking produce to 158°F kills the parasite completely, so cooked food is safe regardless of origin.
Peeled fruit and commercially frozen produce have never been linked to a Cyclospora outbreak.
Washing produce helps, but Cyclospora is unusually good at clinging to surfaces — thorough washing reduces risk, it doesn’t guarantee it.
Which Foods Have a History With This Parasite
Because investigators haven’t identified this year’s source, there’s no single ingredient to strike off your list. Instead, food safety experts are pointing to the foods that have caused Cyclospora outbreaks before, as a reasonable place to be extra careful:
Bagged lettuce and pre-mixed salad kits (including mesclun mixes, coleslaw, and vegetable trays)
Cilantro and parsley
Fresh basil
Raspberries — their bumpy surface makes them notoriously hard to wash clean
Snow peas and green onions
None of these are confirmed as this year’s culprit specifically — they’re foods with a history, not a verdict. A CDC deputy director noted that while cyclosporiasis outbreaks were historically tied to travel abroad, recent years have seen a rise in cases linked to both domestic and imported produce, which is part of why investigators are casting a wide net rather than clearing any one item.
Discover the four overlooked factors your prescriptions were never designed to address—and why they may still affect how you feel.
Why These Particular Foods
It comes down to how the parasite spreads and what makes produce hard to fully clean. Cyclospora gets onto fruits and vegetables through soil or irrigation water contaminated with human feces, and it adheres to produce surfaces unusually well for a parasite. Foods that are eaten raw, have textured or porous surfaces (like raspberries or snow peas), or come pre-cut and bagged (where contamination has more chances to spread before it reaches you) are simply harder to fully decontaminate than something you’ll peel or cook.
What’s Actually Safe to Eat
This is the part that tends to get lost in outbreak coverage: plenty of produce remains entirely fine. Cooking any fruit or vegetable to an internal temperature of 158°F destroys the parasite completely — sautéed greens, roasted root vegetables, and anything else cooked through are not a risk. Peeled fruit is also in the clear; to date, no cyclosporiasis case has ever been linked to peeled fruit or commercially frozen produce, including frozen berries and vegetables. If you’re craving fiber from produce you’d normally eat raw, cooked or peeled options like potatoes, sweet potatoes, and yams are reasonable substitutes for now.
How to Lower Your Risk With Anything You Eat Raw
If you’re not ready to give up salads and fresh berries, the CDC’s standard advice still matters: wash your hands with soap and water before and after handling produce, wash all fruits and vegetables thoroughly under running water — even if labeled pre-washed — scrub firm produce like cucumbers and melons with a clean brush, and cut away any bruised or damaged spots before eating. None of this guarantees zero risk with a parasite this persistent, but it meaningfully reduces it.
When to See a Doctor
If you develop sudden, watery diarrhea — especially if it’s unusually frequent or severe — after eating raw produce in the past one to two weeks, it’s worth contacting a healthcare provider and specifically asking for a Cyclospora stool test, since it isn’t part of routine testing and the parasite doesn’t always show up on the first sample. The illness is treatable with a course of antibiotics, though it can drag on for weeks without treatment.

The benefits of acorns extend far beyond their nutritional value, encompassing environmental sustainability, economic savings, and a reconnection with nature’s rhythms. As we turn to the practical aspects of harvesting and preparing acorns, we embark on a journey not just to rediscover an ancient food source but to embrace a lifestyle that values the bounty nature provides. Stay tuned for the next segment, where we will explore how to unlock the edible potential of acorns, ensuring they can be enjoyed safely and deliciously.
Harvesting and Selecting Acorns
The first step in utilizing acorns is gathering them, a task best undertaken in the early autumn when they are ripe and plentiful. Look for acorns that are firm, without any holes or cracks, as these imperfections may indicate the presence of insects or rot. Green acorns are immature and should be left to ripen, while those that are brown and detach easily from their caps are ready for use. It’s a sustainable practice to gather from the ground, leaving enough acorns for wildlife and the regeneration of the oak forest.
Processing Acorns to Remove Tannins
Shelling: Begin by removing the acorns from their shells. This can be done manually or with the aid of a nutcracker. It’s a labor-intensive step but crucial for accessing the nut meat within.
Leaching Out the Tannins: The most critical step in making acorns edible is leaching out the tannins, which are compounds that give raw acorns their bitter taste and can be harmful in large quantities. There are two primary methods for leaching: cold and hot leaching.
Cold Leaching: This method involves soaking the shelled acorns in cold water. The water should be changed when it becomes discolored, approximately every 12 to 24 hours, until the water remains clear, indicating that the tannins have been removed. This process can take several days to a week, depending on the acorn variety.
Hot Leaching: Hot leaching is faster than cold leaching but requires more active management. Boil the acorns in water, and change the water when it turns dark, repeating this process until the water remains mostly clear. This method can remove the tannins in a matter of hours.
Drying: After leaching, the acorns need to be dried to prevent mold and prepare them for grinding. Spread the acorns on a baking sheet and dry them in an oven at a low temperature, in a dehydrator, or air-dry them in a sunny, well-ventilated area.
Making Acorn Flour
Once dried, the acorns can be ground into flour using a food processor, blender, or hand grinder. The resulting flour should be stored in an airtight container in a cool, dry place or frozen for extended storage. Acorn flour can be used as a substitute for traditional flours in baking, offering a nutty flavor and nutritional boost to bread, pancakes, and other baked goods.
Incorporating acorns into our diets is a journey back to the roots of human sustenance, a nod to the wisdom of our ancestors who relied on the natural world for their dietary needs. This journey is not just about adding a new ingredient to our pantry but about embracing a deeper connection with nature, understanding the cycles of growth and renewal, and appreciating the abundance that surrounds us. As we integrate acorns into our meals, we partake in a tradition that spans centuries and cultures, celebrating the oak tree’s gift and its enduring significance to both the environment and our health. Let the humble acorn inspire you to explore, innovate, and appreciate the simple, yet profound, pleasures of foraging and feasting from the land.
Horse Chestnut: The Strongest Natural Remedy for Swollen Legs and More…
Swollen legs are more than just an inconvenience — they can be painful, heavy, and a sign of deeper circulatory issues. While many turn to synthetic treatments, nature offers a powerful alternative: Horse Chestnut (Aesculus hippocastanum). Known for centuries in traditional medicine and now backed by modern research, this tree holds one of the most potent remedies for leg swelling, poor circulation, and beyond.
🌰 What Is Horse Chestnut?
Horse Chestnut is a tree native to Europe, recognizable by its spiky green fruits and glossy brown seeds. These seeds, often called conkers, are not just for childhood games — they’re packed with a natural compound called aescin, which is the key to this plant’s medicinal power.
💡 Why Horse Chestnut Is So Effective for Swollen Legs
Swelling in the legs often stems from poor blood flow and leaky blood vessels. Horse Chestnut works in three powerful ways:
✅ 1. Strengthens Blood Vessels
Aescin increases the tone of veins and capillaries, making them less prone to leaking fluid into surrounding tissues.
✅ 2. Improves Circulation
It helps blood return to the heart more effectively, reducing the feeling of heavy, tired legs.
✅ 3. Reduces Inflammation
Horse Chestnut has anti-inflammatory effects, which soothe swelling and discomfort in the legs and feet.
These effects make it especially beneficial for:
Chronic venous insufficiency
Varicose veins
Edema from standing or sitting too long
Swollen ankles during hot weather or travel
🌿 Other Health Benefits of Horse Chestnut
While swollen legs are its primary claim to fame, horse chestnut also offers several other benefits:
Relieves Hemorrhoids: Thanks to its vein-tightening effects.
Reduces Varicose Veins: Helps shrink swollen, twisted veins.
Eases Leg Cramps and Restlessness: Often linked to poor circulation.
Improves Skin Health: By promoting better blood flow to tissues.
Supports Lymphatic Drainage: Can ease sluggish lymph flow and puffiness.
Anti-Bruising Effect: Strengthens capillaries and helps bruises heal faster.
